When it comes to romance and fine dining it is hard to beat Coco Bistro, which is located off the beach in the heart of Grace Bay and features a unique, fantasy dining experience in the largest palm grove on Provo. Book for sunset and then eat by candlelight under the swaying palms and twinkling stars. The inventive menu is the work of executive chef and owner Stuart Gary, who fuses local ingredients and flavors together in a fashion that keeps diners (both locals and repeat visit tourists) returning. While dining here keep an eye out for the resident cat, Coco, who has been coming to dine here every night for the last seven years. If you’re allergic to cats, management suggests you dine elsewhere as she is a permanent fixture -- although considering the outdoor space, the likelihood that the cat will bump against you is pretty slim.
